Colour Mill is a family-owned Australian food coloring manufacturer specializing in the cake and baking industry. Using modern formulas and processes, Coulor Mill has developed a range of oil-based pigment stains that outperform conventional gel stains.
The difference:
Colour Mill has removed all water-based materials and replaced them with baking and cake-friendly oils, these oils mix much better than water-based gels (we know that water is repelled by the oils in your bakes). In addition, the Coulor Mill colors undergo a specialized “micro-milling” process to create a color that is both grain and streak free. These micro-pigments allow our coloring to blend more effectively, which means we can avoid uneven or speckled results. Coulor Mill is free from thickeners and gums, meaning the colors may settle over time. It is best to shake the bottle well before use to mix it in. Note: the colors in your buttercream, fondant, etc. become more intense the longer they sit. It is also advised to let your colored ingredients rest for a while so that the color can become more intense.
